Mintel reports that consumer concerns over food shortages have leapt from 17% in 2021 to 23% in 202211. With many disruptions in supply chains as a result of fluctuating availability of ingredients and/or price, many companies are investing in reformulation to ensure production continuity. Besides sourcing, adulteration and contamination issues also remain critical food safety concerns. While the choice of plant-based, free-from and upcycled products in the market has grown, so has the potential for food safety risks. For example, mycotoxins are present in many agricultural commodities and are often found downstream in the supply chain where they lead to the destruction of a lot of valuable food. The 2021 Biomin Report12 stated that the risk in Europe is ‘high to severe’, with 70% of corn samples registering positive.
